Cheddar-Rum Raisin

1 c. Raisins
1/3 c. Rum
8 oz. Sharp cheddar cheese, grated
8 oz. Cream cheese, room temperature
½ tsp. Curry powder
Dash of hot pepper sauce
Soak the raisins in the rum for 1 hour. Use a slotted spoon to remove the
raisins, set aside the raisins and the rum. Combine the cheeses in a
medium bowl or food processor and mix until smooth and fluffy. Beat in the
rum, curry powder and hot pepper sauce, then fold in the raisins. Pack
tightly in a covered container. Refrigerate to allow the flavors to blend,
for up to 3 weeks. (Serves 8-10).
Oriental- Style
Chicken Wings
20 chicken wings
¼ c. Soy sauce
¼ c. Honey
1 Tbsp. Vinegar
1 Tbsp. Rum
2 Tbsp. Fresh ground ginger
Put the chicken wings in a large bowl. Mix all the other ingredients
together then pour over the chicken. Marinade the chicken wings in the
mixture for 8 hours or overnight, turning frequently.
Bake the chicken wings in a preheated oven 400°F, turning and basting
several times for 30-40 minutes or until brown and glazed. (Serves 10-12).
Rum Barbecue Sauce
2 Tbsp. Oil
1 Lrg. Onion, minced
2 cloves Garlic, minced
1 c. Bottled chili sauce
1/3 c. Lime juice
1/3 c. Molasses
3 Tbsp. Mustard
1 Tbsp. Worcestershire sauce
¼ c. Rum
Heat the oil in a medium sized saucepan. Add the onions and garlic and
cook for 2 minutes. Add remaining ingredients, except the rum. Cover and
simmer over a very low heat for about 20 minutes. Remove from heat and
stir in the rum. This is an excellent sauce to make buffalo chicken wings
or even try it on meatballs.
